GRILLED SHRIMP BOIL IN FOIL PACKETS

Make this shrimp boil on the grill or in the oven and enjoy a flavour-packed and healthy meal filled with utterly seasoned potatoes, shrimp, sausage, and a lot more! Looks so good, you’ll never think that this takes just a heartbeat to whip up in one pot!

Ingredients

4 tbsp butter, melted

2 ears corn on the cob, cleaned and each ear cut into 5 to 6 rounds

1 lb. baby potatoes, cut into 1.5” cubes

12 oz. Andouille smoked sausage, cut into 2” pieces

1 lb. raw shrimp, thawed, peeled, and deveined

4 cloves garlic, minced

1 small yellow onion, thinly sliced

2 tbsp old bay seasoning

lemon slices & chopped fresh parsley, for garnish

1 tsp salt

1/2 tsp fresh ground black pepper

How to make Grilled Shrimp Boil in Foil Packets

Grill Directions:

Step 1: Prepare the grill. Preheat it to 400 degrees F. Meanwhile, tear our about 4 large heavy-duty foil sheets into 12 x 12 pieces, then set aside.

Step 2: To a large pot, pour in 8 cups of water. Set this on high heat ad bring it to a boil. Once the water is boiling, add the potatoes and corn to the pot and decrease the heat to a steady simmer for about 10 minutes. Drain when done.

Step 3: Mix the shrimp, sausages, onion, garlic, potatoes, and corn in a large mixing bowl. Then, add the melted butter and sprinkle with salt, pepper, and old bay seasoning. Mix well until completely combined.

Step 4: Between the four aluminium foil sheets, divide the shrimp mixture. Tightly wrap the aluminium foil, seal, then place the packets straight on the grill. Cook the shrimp mixture for about 15 minutes, turning once halfway through cooking. When done, remove the packets from the grill.

Step 5: Open the packets very carefully and serve the grilled shrimp boil garnished with lemon and parsley. Enjoy!

Oven Directions:

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: Place the packets on a large baking sheet and bake for about 15 minutes.

Step 3: When done, remove from the oven and serve right away. Enjoy!
