Ingredients:
1/4 c mayo
2 teaspoons Minced Pickled Jalapenos
2 teaspoons Pickled Jalapeno Juice
2/3 teaspoon Sugar
1/2 teaspoon Cumin
1/2 teaspoon Paprika
1/8 teaspoon Cayenne Pepper
1/8 teaspoon Garlic Powder
1 Dash Salt
Taco Bell Quesadilla Ingredients:
1 Chicken Breast
1 c Cheddar & Monterey Jack Cheese (If you can’t find a bag that’s a mix, just buy them separately and use 1/2 c of each)
1 Slice American Cheese
2 Flour Tortillas (Burrito size)
Directions:
For the Taco Bell Quesadilla Sauce:
In a mixing bowl, add all the ingredients for the sauce. Stir until well blended, then set aside.
For the Taco Bell Quesadilla:
Sprinkle salt and pepper over the chicken breast, then rub until well coated on all sides.
Place a skillet on the stove and turn the heat to medium-high.
Add 1/2 tablespoon of vegetable oil and allow it to become hot.
Add the chicken breast and cook each side until brown. You can also use a thermometer for this. The temperature should reach about 165 degrees F.
Remove the chicken breast from the skillet onto a cutting board. Slice into thin cuts.
In the same skillet, add the tortilla and top it with 1/4 cup of shredded cheese and half a slice of American cheese.
Put 1/2 of the chicken slices over the cheeses.
Spread 1.5 tbsp of the sauce over the other tortilla.
Use a spatula to fold the tortilla, then press it to seal.
Cook for about 2 minutes on each side or until the cheese is melted completely.
Remove from the skillet onto a cutting board.
Slice into four equal cuts with a pizza cutter.
Serve and enjoy!
