Ingredients:
Butter and flour to prepare a 9×5-inch loaf pan
½ c plus 1 tablespoon brown sugar, divided
1 tsp cinnamon
½ tsp freshly grated nutmeg
2 apples, peeled, cored, and diced (we used Braeburn)
1 tbsp plus 2/3 cup granulated sugar, divided
1 tsp apple pie spice
½ c walnuts, chopped small
½ c butter (8 tbsp)
2 Eggs
1½ tsp vanilla extract
1½ c all-purpose flour
2 tsp baking powder
¼ tsp baking soda
½ c sour cream
Glaze
¼ c brown sugar
1 tbsp butter
2 tbsp heavy cream
2 tbsp confectioners’ sugar
Directions:
For the Cake:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Brush with butter and sprinkle flour in a 9×15-inch loaf pan.
Add cinnamon, nutmeg, and 1/2 cup of brown sugar into a mixing bowl. Stir until well mixed.
In another mixing bowl, add the apples, 1 tbsp of granulated sugar, 1 tbsp of brown sugar, walnuts, and apple pie spice. Toss until the apples are well coated.
Add 2/3 cup of granulated sugar and butter into a stand mixer. Beat until well mixed.
Add eggs gradually and beat every addition until well mixed.
Add the vanilla and stir until well blended.
In a mixing bowl, add baking soda and baking powder. Whisk until well mixed.
Transfer the sour cream and flour mixture and beat until just blended.
Add 1/2 of the batter into the prepared pan and spread it evenly.
Add 1/2 of the apple mixture and poke them into the batter.
Sprinkle 1/2 of the sugar mixture over the apples. Repeat the process until everything is arranged in layers ending with the sugar mixture.
Place it inside the preheated oven and bake for about an hour or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and let it rest at room temperature.
For the Glaze:
Place a saucepan on the stove and turn the heat to medium.
Add the butter, cream, and brown sugar. Stir until well blended, then allow it to boil.
Turn the heat down to medium-low and simmer for about 2 minutes.
Remove the pan from the heat, then add the powdered sugar. Whip until well blended. Allow it to rest for about 10 minutes.
Drizzle the glaze over the cooled cake and spread it evenly. Cool at room temperature.
