Ingredients:

2-3 small to medium-sized zucchini, sliced lengthwise in approximately 1/4

1 cup all-purpose flour

2 Eggs, beaten

1/4 cup milk

salt and pepper, to taste

1/2-inch olive oil, extra virgin in a skillet

dipping sauce (ingredients in instructions)

Directions:

Step 1: Place a skillet on the stove and turn the heat to medium.

Step 2: Add the oil and allow it to become hot.

Step 3: Slice the zucchini into 1/4-inch cuts.

Step 4: Season the zucchini slices with salt and pepper to taste.

Step 5: In a mixing bowl, add milk and eggs. Beat until well mixed.

Step 6: In another mixing bowl, add the flour, salt, and pepper. Whisk until well mixed.

Step 7: Dip each zucchini cut into the egg mixture. Make sure to coat them well.

Step 8: Dip each coated zucchini cut into the flour mixture.

Step 9: Add them into the hot oil and cook until done.

Step 10: Place them onto a clean plate lined with paper towels to drain any excess oil.

Step 11: Serve with your preferred dipping sauce. Enjoy!

Notes:

Holly’s Dipping Sauce:

Mix 1 tablespoon of horseradish and 1/2 cup of mayonnaise.

Horsey Ketchup Sauce:

Mix 1 tablespoon of horseradish and 1/2 cup of ketchup.

Ranch Dill Dip:

Mix fresh dill and 1/2 cup of ranch dressing.

Cucumber Ranch and Herb Dip:

Mix 3 sprigs of cilantro, oregano, 1/2 cup of ranch dressing, and 1/4 cup of cucumber.
