Ingredients:

2 lbs sweet potatoes scrubbed, peeled if desired, and sliced crosswise into ½” rounds

2 tbsp melted butter

salt and pepper to taste

¼ c maple syrup

1 tbsp brown sugar more or less to taste

½ c chopped pecans

Directions:

Prepare the oven and preheat to 225 degrees C or 450 degrees F.

Line with aluminium foil a rimmed baking sheet.

In a mixing bowl, add the potatoes, melted butter, salt, and pepper. Toss until well combined.

Transfer the coated potatoes into the prepared baking sheet and spread it evenly.

Place them inside the preheated oven and bake for about 20 minutes or until they turn brown.

In a mixing bowl, add brown sugar, maple syrup, and chopped pecans. Stir until well mixed.

Turn the potatoes over, then top each with the maple syrup mixture.

Put them back inside the oven and bake for another 5 minutes or until done.

Remove from the oven and allow the potatoes to cool for a few minutes at room temperature.

Serve and enjoy!

Notes:

It is important to slice the potatoes to 1/2-inch first before you start.

Make sure to add the maple syrup mixture to the centre of each potato.

Feel free to use your preferred spices for this recipe.
