PENNE ALFREDO WITH BACON AND SUN DRIED TOMATO

Ingredients:

10.5ounces / 300g Penne Pasta

1 1/4 c / 300ml Heavy/Double Cream, at room temp

2 tablespoons Unsalted Butter

5ounces / 150g Streaky Bacon, chopped

1/2 c / 40g freshly grated Parmesan (plus extra to serve)

3/4 c / 75g Sun-Dried Tomatoes, sliced

1 teaspoon Garlic, minced

1 handful of Fresh Basil, chopped

Salt & Black Pepper, to taste

Directions:

Place a skillet on the stove and turn the heat to medium.

Add the bacon slices and cook until crispy. Discard any excess grease.

Add the garlic and sun-dried tomatoes. Saute until aromatic.

Add butter and stir until melted completely.

Refer to the directions provided on the package of the pasta on how to cook it. Drain and set aside 1 cup of pasta water.

Add the cream into the skillet and stir until well mixed. Allow it to simmer for a few minutes.

Add the Parmesan cheese, seasoning, and basil. Stir until well mixed and thick.

Add the cooked pasta and toss until well coated with the sauce.

Allow it to simmer for a few minutes. Add the pasta water if the texture of the sauce s too dry.

Garnish each serving with a generous amount of Parmesan cheese and basil.

Serve and enjoy!
