I am obsessed with anything caramel. It gives me the perfect balance of salty and sweet. And this Ritz Cracker Pie is another great dessert that my family loves. A wonderful caramel-flavoured treat made using only a few simple ingredients.
If you knew me well you’ll know how much I love caramel. I love them more than chocolates. From drinks to treats, they are my most favoured flavour. If you have not tried this pie yet, you should soon!
Ingredients
250 grams Ritz crackers
75 grams melted butter
75 grams demerara sugar
50 grams desiccated coconut
150 grams butter
150 grams double cream
150 grams soft brown sugar
150 grams demerara sugar
2 tablespoons of skimmed milk powder
Generous pinch of salt
3 large eggs
How to make Ritz Cracker Pie
Step 1: Prepare the oven. Preheat it to 175 degrees C. After greasing a 20 cm springform cake tin, line its base.
Step 2: In a food processor, place half of the Ritz crackers. Process until fine, then, add the melted butter, sugar, and coconut. Continue to blend. To the base of the lined cake tin, pour this mixture and press. Keep it aside to cool.
Step 3: In a large saucepan, combine the butter, cream, sugars, and milk powder. Bring the mixture to a boil while stirring constantly. Take off the heat and let the mixture cool for a bit. Season with salt and add the eggs a piece at a time, beating every after each addition. Pour this through a strainer or sieve, then set aside.
Step 4: In the cake tin, arrange the remaining Ritz crackers to make circles. Over the crackers, pour the caramel custard. Bake in the preheated oven for about 45 minutes until golden. When done, remove from the oven and let the pie cool completely to allow the caramel to set.
Step 5: Slice and serve. Enjoy!
