I have made this wonderful cake a lot of times already and still obsess with it! It’s crazy easy to whip up using only simple ingredients (you might already have them on hand). My picnic cake and perfect for when I have guests coming over for tea. If desired, you can try making this in a tube pan as well. It’s a fantastic blueberry cake recipe. Feel free to use either fresh or frozen, whatever is available. Either way, this cake is amazing!

Ingredients

½ c. butter

½ c. white sugar

¼ tsp salt

1 tsp vanilla extract

2 Egg yolks

1 ½ c. all-purpose flour

1 tsp baking powder

⅓ c. milk

2 Egg whites

¼ c. white sugar

1 ½ c. fresh blueberries

1 tbsp all-purpose flour

1 tbsp white sugar

How to make Melt In Your Mouth Blueberry Cake

Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C. After greasing an 8-inch square pan, flour it and set it aside.

Step 2: In a bowl, place the butter/margarine and half cup of sugar. Cream until fluffy. Add the salt and vanilla. To the sugar mixture, add the egg yolks, reserving the whites. Continue to beat until creamy.

Step 3: In another bowl, mix 1 1/2 cups flour with baking powder. Add this to the egg yolk mixture alternately with the milk. And with a tbsp flour, coat the berries before adding them to the batter.

Step 4: Beat the egg whites in a separate bowl until soft peaks form. Then, add 1/4 cup of sugar (a tbsp at a time), beating until stiff peaks form. Into the batter, fold the egg whites. Pour this into the prepared pan and sprinkle with the rest of the 1 tbsp sugar.

Step 5: Place in the preheated oven and bake for about 50 minutes until a toothpick inserted in the center of the cake comes out clean.
