SKINNY CHICKEN MARSALA (HEALTHY CHICKEN MARSALA)

Ingredients:

2 large boneless skinless chicken breasts (8 ounces each)

Kosher salt

Freshly ground black pepper

1/4 c plus 1 tsp all-purpose flour

1 tbsp unsalted butter

2 tsp olive oil

3 garlic cloves minced

1/4 c finely chopped shallots

8 oz sliced cremini mushrooms

3 oz sliced shiitake mushrooms

1/3 c Marsala wine

1/2 c Swanson 88% fat-free chicken broth I used chicken stock since it was all I had on hand

2 tbsp chopped fresh parsley

Directions:

Prepare the oven and preheat to 100 degrees C or 200 degrees F.

Horizontally slice the chicken breasts into quarters.

Cover each piece with plastic wrap, then pound each into 1/4-inch thick.

Season each chicken slice with salt and pepper.

Coat each chicken piece with flour and shake off any excess.

Arrange the chicken pieces onto wax paper.

Place a large nonstick skillet on the stove and turn the heat to medium-high.

Add 1/2 tbsp of butter and 1 tsp of olive oil, then allow them to melt and become hot.

Add the chicken into the hot skillet and cook each side for 3 minutes or until they turn golden brown.

Remove the chicken pieces from the skillet into a baking dish. Put inside the oven to keep them warm.

In the same skillet, add 1/2 tbsp of butter and 1 tsp of olive oil, then allow them to become hot.

Add the garlic and shallots, then saute until aromatic and soft.

Add the mushrooms, salt, and pepper. Stir and cook for a few minutes.

Add 1 tsp of flour and cook until just brown.

Add the chicken broth, Marsala wine, and parsley. Stir until well mixed. Make sure to scrape the bottom of the skillet to get the brown bits.

Put the chicken pieces back to the skillet and toss until well coated with the delicious sauce.

Turn the heat down to low and simmer everything for 5 minutes.

Serve and enjoy!
