Prep time: 2 hrs | Cook time: 35 mins | Serves: 4

My daughter is obsessed with drumsticks. Whenever I cooked chicken, I make sure to use drumsticks alone most of the time. I have so many chicken recipes, but this simple recipe is my most favourite. It’s easy, straightforward, and quick. Not to mention, this recipe is budget-friendly, family-approved, and a kid’s best friend. Crazy good, you’ll not mind getting your hand all greasy!

Lemon and garlic-infused chicken. This recipe is surely a must-try and for keeps. Feel free to add a little hint of sweetness to your already amazing chicken dinner by serving this with maple roasted carrots on the side.

Ingredients

10 to 12 chicken drumsticks

2 tablespoons fresh parsley, minced

1/4 c. olive oil

4 garlic cloves, minced

2 tablespoons fresh lemon zest

1/4 c. fresh lemon juice

1 teaspoon paprika (optional)

1 teaspoon dried oregano

Sea salt and freshly ground black pepper

HOW TO MAKE LEMON AND GARLIC CHICKEN DRUMSTICKS

Step 1: Place all the ingredients (fresh parsley, olive oil, garlic cloves, fresh lemon zest, fresh lemon juice, paprika, dried oregano, and freshly ground black pepper) except for the drumsticks in a bowl. Season to taste, then mix well.

Step 2: With sea salt and freshly ground black pepper, season the drumsticks. In a marinating container, place the drumsticks, then pour over the lemon-garlic marinade. Put the lid on and allow the chicken to marinate for at least 2 hours or up to 8 hours.

Step 3: When ready to bake, prepare the oven. Preheat it to 425 degrees F.

Step 4: From the container, remove the chicken and transfer them to a baking dish, then put in the preheated oven to bake for about 30 to 35 minutes, turning once halfway.

Step 5: Remove from the oven when done and serve the chicken garnished with fresh parsley. Enjoy!
