INGREDIENTS

3 tablespoons unsalted butter

8 ounces bow tie pasta

2-3 chicken breasts, cut into chunks

1 1/2 teaspoons minced garlic

3 teaspoons Cajun seasoning, more or less to taste

4 ounces cream cheese, softened

1 c. milk

3/4 c. freshly grated Parmesan cheese

1 yellow bell pepper, cut into slices

1 red bell pepper, cut into slices

1/2 teaspoon black pepper

1/2 teaspoon salt

How to make Cajun Chicken Pasta

Step 1: Following the package directions, cook the pasta until al dente. When done, drain the pasta and rinse with cold water. Set aside.

Step 2: Melt the butter in a large skillet over medium heat. Once the butter has melted, add the minced garlic and cook for about 30 seconds.

Step 3: To the skillet, add the cubed chicken along with the red and yellow bell peppers, Cajun seasoning, salt, and pepper. Continue to cook for an additional 4 to 5 minutes or until the chicken is no longer pink inside.

Step 4: Now, add the milk and softened cream cheese. Stir well until the cream cheese has melted and the sauce is creamy. Then, add the cooked pasta noodles followed by the Parmesan cheese. Mix well until everything is incorporated.

Step 5: When done, remove from the heat and serve right away with garlic bread or a green salad.
