You’ll love these marinated chicken kebabs! They are incredibly easy to whip up. The chicken, red onion, and bell peppers are marinated in a simple yet tasty yoghurt marinade to guarantee juicy, tender chicken with tons of flavour results. Not to mention the Middle Eastern spice blend hint makes a huge difference! Make these kebabs either on a grill or in the oven for an easy, healthy dinner that your entire family will enjoy!

INGREDIENTS

1 c. red onion, red and green bell pepper, or any vegetables of choice, optional
garlic turmeric rice or any other sides such as naan or salad, to serve
fresh parsley, lemon, and/or yoghurt sauce to serve, optional

2 pounds boneless, skinless chicken thighs removed of excess fat and cut into bite-sized pieces

Yoghurt Marinade:

2 tablespoons olive oil

4 cloves garlic minced

1 c. plain yoghurt 2% or full fat recommended

2 tablespoons lemon juice

1 teaspoon oregano dried, or 1 tablespoon fresh

1 tablespoon paprika

1/2 teaspoon cumin

1/2 teaspoon black pepper or to taste

1/2 tablespoon kosher salt or to taste

How to make Easy Marinated Chicken Kebabs

Step 1: In a large container or food storage bag, combine the yoghurt marinade ingredients. Add the chicken along with the red onion and bell peppers. Toss to make sure they are evenly coated with the marinade. Cover and place in the fridge to marinate for at least 8 hours, preferably overnight.

Step 2: When ready to cook, ready the oven and preheat it to 450 degrees F or 230 degrees C. Line a baking sheet with aluminium foil or any broiler-safe material.

Step 3: Onto the skewers, thread the marinated chicken and vegetables. Lay them on the prepared baking sheet and place them in the preheated oven. Bake the kebabs for approximately 20 to 25 minutes or until golden brown and cooked through, flipping the skewers halfway. Keep an eye on the kebabs and be very careful not to overcook them.

Step 4: For the final touch, turn the oven to broil for approximately 2 to 3 minutes. This is optional but recommended if you like a lightly charred finish.

Step 5: Serve these chicken kebabs garnished with parsley, lemon wedges, and/or yoghurt sauce, and enjoy right away.

NOTES:

To grill: preheat and grease the grill, then grill the kebabs for about 10 to 15 minutes or until cooked through and golden brown while turning the skewers often.

If metal skewers are not available, wooden is okay as long as you soak them first in water for at least half an hour before using them. This will protect the skewers from burning.
