PUMPKIN CINNAMON BREAD

This bread recipe is super awesome! Give it a try and serve it with your favourite cup of coffee and you have yourself a snack to remember. Enjoy!

Ingredients:

3 1/2 c all-purpose flour

1 1/2 tsp baking powder

1 tsp baking soda

1 tsp salt

2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ground ginger

1/2 tsp ground cloves

2/3 c vegetable oil

2 c sugar

4 Eggs

1 tsp vanilla

15 ounces can pumpkin puree 1 can

1/2 c water

Streusel Topping

1/2 c brown sugar

1/2 c all-purpose flour

2 tsp cinnamon

1/4 c Challenge unsalted butter melted

1/2 c chopped pecans or walnuts optional

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Apply cooking spray and sprinkle flour in two loaf pans.

Step 3: Add the dry ingredients into a large mixing bowl. Whisk until well mixed.

Step 4: In a separate mixing bowl, add the eggs, pumpkin, sugar, vanilla, and oil. Beat until well mixed, then add the water. Beat again until mixed.

Step 5: Transfer the dry ingredients into the bowl with the dry ingredients. Beat until well mixed.

Step 6: Transfer the batter into the prepared pans and spread it evenly.

Step 7: In a small mixing bowl, add the flour, brown sugar, nuts, and cinnamon. Stir until well mixed.

Step 8: Add the melted butter and stir until well mixed.

Step 9: Sprinkle the streusel topping over the loaves.

Step 10: Place the loaves inside the preheated oven and bake for 1 hour or until a toothpick comes out clean after inserting it in the middle.

Step 11: Remove from the oven and allow them to cool at room temperature.

Step 12: Serve and enjoy!
