Ingredients:

Chicken Breast:

3 lbs chicken breast

1 tsp dried basil

1/2 tsp salt

1/2 tsp ground black pepper

1 tbsp olive oil

Pot Pie:

pie crust Either 4 store-bought- 2 tops and 2 bottoms, or double the linked recipe.

2/3 c butter

1/2 an onion chopped

2/3 c flour

3 1/2 c chicken broth

1 c milk

3 c frozen mixed vegetables thawed and patted dry

1/2 tsp dried basil

pinch of garlic powder

Salt and pepper to taste

1 Egg beaten

Directions:

Step 1: Season with salt, pepper, and basil the chicken breasts.

Step 2: Drizzle a baking dish with olive oil.

Step 3: Arrange the chicken breasts into the prepared baking dish.

Step 4: Place the baking dish inside the preheated oven and bake for 30 minutes at 175 degrees C or 350 degrees F.

Step 5: Remove from the oven and allow the chicken breasts to cool at room temperature. Chop them into small pieces.

Step 6: Prepare the pie crust. Cover and place it inside the fridge to chill.

Step 7: Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Step 8: Brush with butter a 9×13-inch baking dish.

Step 9: Place a stockpot on the stove and turn the heat to medium.

Step 10: Add butter and allow it to melt.

Step 11: Add the onions and sauté for 3 minutes or until soft.

Step 12: Add the flour and stir until well mixed.

Step 13: Add the chicken broth gradually and stir every addition.

Step 14: Stir in the milk and simmer until the texture of the sauce becomes thick.

Step 15: Add the mixed veggies, chicken, garlic powder, basil, salt, and pepper. Stir until well mixed.

Step 16: Remove the pot from the heat.

Step 17: Unroll the pie crust and place it onto the prepared baking dish.

Step 18: Spread the sauce mixture and unroll the second crust over.

Step 19: Press the crust together and make slits on top.

Step 20: Brush the egg wash on top.

Step 21: Place the pie inside the preheated oven and bake for 30 minutes.

Step 22: Cover the pie and bake for 30 minutes more or until golden brown.

Step 23: Let the pie cool at room temperature for 15 minutes.

Step 24: Serve and enjoy!
