APPLE CIDER CUPCAKES AND BROWN SUGAR CINNAMON BUTTERCREAM

These cupcakes are such a delight! You will surely love these. Pair it with your favourite coffee and you have yourself a snack to remember. Enjoy!

Ingredients:

Cupcakes:

2 eggs

1⅔ cup all-purpose flour

1 cup apple cider

⅔ cup of sugar

½ cup unsalted butter softened

2 tsp. baking powder

1 tsp. ground cinnamon

½ tsp. salt

1 tsp. vanilla

Frosting:

1 cup softened butter

3 cup powdered sugar

½ cup light brown sugar

1 tsp cinnamon

2 tbsp milk

1 tsp vanilla

Directions:

Step 1: In a medium mixing bowl, add the butter and sugar. Beat until creamy. Add in the vanilla and eggs. Beat until well blended.

Step 2: In a separate mixing bowl, add the baking powder, flour, ground cinnamon, and salt. Whisk until well mixed.

Step 3: Transfer the flour mixture into the butter mixture. Add apple cider as well. Stir until well combined.

Step 4: Line muffin tins with parchment paper or foil.

Step 5: Spoon 2/3 of the batter and fill each lined muffin tin.

Step 6: Bake inside the oven at 350 degrees for 19 minutes or until a toothpick comes out clean after inserting in the middle.

Step 7: Remove from the oven and let it sit on a wire rack to cool at room temperature.

How To Make The Frosting:

Step 1: In a medium mixing bowl, add cinnamon, brown sugar, vanilla, and butter. Stir until fluffy.

Step 2: Add the powdered sugar gently and stir until well mixed.

Step 3: Pour in the milk and stir until well mixed.

Step 4: Transfer the frosting into a piping bag and spread it on top of the cooled cake.

Step 5: Place a slice of apple on top of each cupcake.

Step 6: Place the frosted cupcakes inside an airtight container.

Note:

These cupcakes can stay fresh for up to 5 days at room temperature just make sure to seal the container.
