Ingredients:
For the Salmon
4 salmon fillets (4-6 oz. each)
1 tablespoon olive oil
1 teaspoon Cajun seasoning or to taste
For The Spinach Stuffing
3 ounces cream cheese
½ c mozzarella cheese
½ c feta cheese crumbles
3 ounces fresh baby spinach
Directions:
In a mixing bowl, add the feta cheese, cream cheese, and mozzarella cheese. Stir until well combined.
Chop the spinach and toss them into the cheese mixture. Use your hands to mix until well combined.
Make a pocket-like slice in the middle of each salmon.
Rub olive oil over each salmon fillet, then season each with Cajun seasoning.
Stuff each salmon fillet with the stuffing.
Arrange the stuffed salmon onto a baking sheet.
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
