2 unbaked pie crusts
2 tablespoons Minute tapioca
2 tablespoons butter softened
6 cups fresh peaches, peeled and sliced
1 1/4 cups sugar
1/3 cup flour
1/4 teaspoon cinnamon
cream and sugar
Prepare the oven and preheat to 216 degrees C or 425 degrees F.
Put a crust in a 9-inch round pie pan.
Use a fork to poke small holes on the sides and bottom of the crust.
Sprinkle 2 tablespoons of tapioca below the prepared crust.
Add flour, sugar, and cinnamon into a large mixing bowl. Stir until well mixed.
Add the peaches and stir until just combined.
Spread the peach mixture over the crust.
Add dollops of butter over the peach mixture.
Put the second crust over the peach layer. Press the sides, then trim the crust.
Tuck the crust and use your fingers to pinch them together. You should get a scalloped edge.
Run a knife over the crust to create shallow slits. They will help to release the steam.
Brush sour cream on top of the crust, then sprinkle granulated sugar on top.
Place it inside the preheated oven and bake for about an hour or until done.
Remove from the oven and allow it to cook for about an hour at room temperature.
Serve and enjoy!
