Ingredients:
1 Large Cucumber halved lengthways and sliced
4 Vine-ripened tomatoes cut into wedges
½ Red onion sliced thinly
1-2 large Avocados diced
DRESSING
1/4 c Red wine vinegar
1 teaspoon Lemon juice freshly squeezed if possible
1 teaspoon garlic minced
1/4 teaspoon Granulated sugar
1 teaspoon Dijon mustard
1 ½ teaspoons Dried oregano
1/4 c Extra-virgin olive oil
Directions:
In a mixing bowl, add all the ingredients for the dressing. Whisk until well combined.
In another mixing bowl, add the red onion, cucumber, tomatoes, and avocado.
Add the dressing over the salad and toss everything until well coated.
