This awesome Avocado Egg Salad will surely give you satisfaction! What I love the most about this is that it is very versatile. I mean, you can put it pretty much on anything and it will be delicious! I love adding this to sandwiches. Give your bread slices a nice toast, put veggies and meat, and spread this on top. Oh, man, you are so in for a treat! Once you taste its delicious flavours, it will be very hard to forget about it! As perfect as this salad may be, feel free to add more ingredients if you wish. Ingredients:

2 avocados

5 hardboiled Eggs

2 tablespoons plain yoghurt

1 tablespoon lemon juice

2 tablespoons chopped chives

1 teaspoon mustard

¼ teaspoon salt or to taste

¼ teaspoon pepper or to taste

Directions:

Slice each avocado into two and remove the flesh.

Place the avocado flesh into a medium mixing bowl.

Use a fork to mash the avocado flesh.

Add yoghurt, lemon juice, chives, mustard, salt, and pepper. Stir until well mixed.

Slice the peeled eggs, then add them into the mashed avocado. Stir until well combined.

Serve and enjoy!

Notes:

To use it for sandwich:

Toast the bread slices and fill each with your preferred ingredients.

Add the mashed avocado on top and spread it evenly.
