Ingredients:

2 1/2 c (325grams) all-purpose flour

2 1/2 teaspoon baking powder

1/2 teaspoon salt

3/4 c (168grams) unsalted butter, room temperature

1 1/2 c (310grams) sugar

3 tablespoons vegetable oil

1 tablespoon vanilla extract

4 large Eggs

1 1/4 c (300ml) milk

VANILLA FROSTING:

1 1/2 c (336grams) salted butter

1 1/2 c (284grams) shortening

12 c (1380grams) powdered sugar

1 tablespoon vanilla extract

6–7 tablespoons (90-105ml) water or milk

Violet get icing colour

Cornflower blue gel icing colour

Sprinkles

Directions:

FOR THE CAKE:

Step 1: Line with parchment paper three 8-inch cake pans and apply cooking spray on the sides.

Step 2: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 3: In a medium mixing bowl, add in the flour, salt, and baking powder. Whisk until well combined.

Step 4: In a large mixing bowl, add in the sugar, butter, vanilla extract, and oil. Beat for about 3 minutes or until well mixed.

Step 5: Add in eggs gradually and whisk every addition.

Step 6: Make sure to scrape the sides of the bowl and stir until well combined.

Step 7: Add in ½ of the dry ingredients into the batter and stir until well mixed.

Step 8: Add in the milk gradually and stir until well mixed.

Step 9: Add in the rest of the dry ingredients and stir until smooth. Make sure not to over mix.

Step 10: Distribute the batter between the prepared cake pans.

Step 11: Place them inside the preheated oven and bake for 25 minutes or until a toothpick inserted in the middle of the cake comes out clean.

To Make the Frosting:

Step 1: In a small mixing bowl, add in the shortening and butter. Beat until well combined.

Step 2: Add in ½ of the powdered sugar and stir until well blended.

Step 3: Add in 5 tablespoons of water and vanilla extract, and then stir until well mixed.

Step 4: Add in the rest of the sugar and stir until well mixed. Make sure to add more water or milk if needed.

Assemble the Cake:

Step 1: Remove the domes from the top of the cakes using a serrated knife.

Step 2: Put the first cake on the plate and spread 1 cup of frosting on top.

Step 3: Repeat step 2 until everything is arranged in layers.

Step 4: Decorate the cake whatever you like.

Step 5: Place the cake inside the fridge.
