SHRIMP IN ROASTED PEPPER SAUCE

I love how simple this recipe is. I mean, with this very basic set of ingredients, you will surely have the best dish today! I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! Ingredients:

1 pound peeled deveined shrimps

3 tablespoons butter

½ tablespoons paprika

½ teaspoon red pepper flakes optional

2 garlic cloves

12 ounces jar of roasted peppers

¾ c Half and Half or heavy cream

¾ c Parmesan cheese shredded

salt to taste

chopped parsley to garnish

Directions:

In a blender, add the roasted peppers and the liquid that came with them. Pulse until well blended.

Place a large skillet on the stove and turn the heat to medium-high.

Add butter and allow it to melt.

Add the shrimps, red pepper flakes, and paprika. Stir and cook for 5 minutes or until done.

Reduce the heat to low, then add the garlic and salt. Sauté for another minute or until aromatic.

Remove the shrimps from the pan onto a clean plate.

Add the puree into the skillet and stir until well mixed. Cook for another 10 minutes or until done.

Add the Parmesan cheese and half & half. Stir until well mixed.

Put the shrimp back to the skillet and toss until well coated with the sauce.

Sprinkle more Parmesan cheese and parsley on top.

Serve immediately and enjoy!
