GRANDMA’S OATMEAL CAKE

Ingredients:

CAKE:

1 cup quick oatmeal

1 1/2 cups boiling water

1 cup granulated sugar

1 cup brown sugar

1/2 cup oleo (butter or margarine)

2 medium Eggs

1 1/2 cups flour

1 teaspoon cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

FROSTING:

2 tablespoons soft oleo (butter)

1 cup brown sugar

1/2 cup milk or cream

1 teaspoon vanilla extract

3/4 cup flaked coconut

3/4 cup chopped pecans

Directions:

In a mixing bowl, add the oatmeal and boiling water. Stir until well combined.

Place it inside the fridge to chill.

In a mixing bowl, add eggs, oleo, and sugars. Stir until well combined.

Add cinnamon, flour, salt, and soda. Stir until well blended.

Add the oatmeal and stir until well mixed.

Apply cooking spray in a 9×13-inch cake pan.

Transfer the batter into the prepared pan.

Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Place it inside the preheated oven and bake for 50 minutes or until done.

Remove from the oven and let it sit at room temperature while you make the frosting.

For the Frosting:

Place a saucepan on the stove and turn the heat to medium.

Add butter, milk, and sugar. Stir and allow the mixture to boil.

Remove the pan from the heat and add the coconut, vanilla, and pecans. Stir until well blended.

Pour the frosting over the cake and spread it evenly.

Allow the cake to cool completely at room temperature.

Serve and enjoy!
