Ingredients:

Salmon:

1 tablespoon Olive Oil

1 pound Salmon Fillets 3 or 4 salmon fillets

1 teaspoon Italian Seasoning

1/4 teaspoon salt

White cream sauce:

6-8 cloves Garlic peeled

1/4 c Sun-dried tomatoes chopped

5 ounces Fresh Spinach

1 c Pitted green Italian Olives

1/4 c vegetable broth

3/4 c Coconut Cream

Directions:

Use paper towels to pat dry the fish fillets.

Season all sides of the fillets with Italian seasoning, salt, and pepper.

Place a large pan on the stove and turn the heat to medium.

Add oil and allow it to become hot.

Add the fish fillets and cook each side for 4 minutes or until they turn golden brown.

Remove the fish from the skillet onto a clean plate.

In the same skillet, add the garlic and sauté until aromatic.

Add the olives, spinach, tomatoes, and broth. Stir until well combined.

Turn the heat down to low and cook until the veggies are soft.

Add the coconut cream and stir until well mixed.

Put the fish fillets back to the skillet and allow the mixture to become hot.

Add more seasonings if needed.

Serve and enjoy!

Notes:

Place the salmon onto a serving plate, then spoon the delicious sauce on top. Garnish with your preferred herbs.
