Ingredients:

1 pound shrimp deveined and cleaned

8 ounces linguine

1 tablespoon oil

1 teaspoon Cajun seasoning

1 cup half and half

2 tablespoons butter

2 cloves garlic minced

A few sprigs of chopped parsley

1 Roma tomato diced small

1/4 cup parmigiana Reggiano

1 tablespoon lemon juice optional

salt and pepper

Directions:

Step 1: Use paper towels to pat dry the shrimp.

Step 2: Season the shrimp with Cajun seasoning, salt, and pepper.

Step 3: Refer to the directions provided on the package of the linguine on how to cook it.

Step 4: Place a large pan on the stove and turn the heat to medium.

Step 5: Add butter and oil, then allow them to melt and become hot.

Step 6: Add the seasoned shrimp and minced garlic. Cook for 2 minutes or until the shrimp turns pink on each side.

Step 7: Add 1/2 of the Parmigiano Reggiano and whisk for about 2 minutes until it starts to boil.

Step 8: Remove from the heat and toss in the cooked pasta.

Step 9: Add the parsley, sliced tomato, and the rest of the Cajun seasoning. Toss everything until well coated.

Step 10: Serve hot and enjoy!

Notes:

Add a little amount of half & half if the sauce gets too thick.

For more spiciness, add more Cajun seasoning.
