Ingredients:
2 1/2 sticks butter, softened
2 1/2 cups sugar
1 4 ounces package strawberry jello
5 ex. large Eggs
1 teaspoon vanilla extract
1 1/2 teaspoons strawberry extract
1 1/2 teaspoons baking powder
4 1/2 cups flour
1/2 teaspoon salt
1 1/4 cups milk
1/4 cups pureed strawberry, strained
1 1/2 cups chopped strawberries (a little more if you like)
Frosting:
1 can Pillsbury cream cheese frosting
1 1/2 package (4ounces) strawberry jello
1 teaspoon strawberry extract
Directions:
Step 1: Prepare the oven and preheat 160 degrees C or 325 degrees F.
Step 2: Apply cooking spray and sprinkle flour on a 10-inch tube pan.
Step 3: In a small mixing bowl, add the butter and sugar. Beat until well mixed and smooth.
Step 4: Add in eggs gradually and beat every addition.
Step 5: Add the strawberry and vanilla extract. Stir until well mixed.
Step 6: In a small mixing bowl, add the flour, salt, and baking powder. Whisk until well mixed.
Step 7: Transfer the flour mixture into the butter mixture. Make sure to add them alternately.
Step 8: Add the strawberry puree and strawberry jello. Beat until well mixed.
Step 9: Add the chopped strawberries and stir until well mixed.
Step 10: Transfer the mixture into the prepared pan.
Step 11: Place the tube pan inside the preheated oven and bake for 1 hour and 20 minutes or until done.
Step 12: Remove from the oven and allow the cake to rest for about 10 minutes.
Step 13: Remove the cake from the pan.
Step 14: Spread the glaze over the cooled cake.
Step 15: Serve and enjoy!
To Make the Glaze:
Step 1: In a microwavable bowl, add the cream cheese frosting.
Step 2: Place the bowl inside the microwave and heat for 1 minute, then remove.
Step 3: Add the jello and extract into the melted cream cheese. Stir until well blended.
Step 4: Glaze the cooled cake.
