Ingredients:
pie crust for double-crust pie
3 pounds medium peaches, peeled, pitted, and cut into 1/4-inch slices
2 tablespoons cornstarch
1 cup sugar
2 teaspoons fresh lemon juice
1/2 teaspoon ground cinnamon, plus more for the top of the crust
4 tablespoons (1/2 stick) butter, chilled, cut into small pieces
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Brush with melted butter an 8-inch square baking dish.
Add peaches, lemon juice, cinnamon, and sugar into a mixing bowl. Toss until well combined.
Add butter and stir until just mixed.
Transfer 1/2 of the mixture into the prepared baking dish and spread it evenly.
Sprinkle flour onto a flat surface, then place the dough on it.
Roll the dough into 1/8-inch thick.
Put the dough on top of the peaches.
Spread the rest of the peaches over the dough.
Place the rest of the dough on top of the peaches. Discard any excess.
Pinch the top of the dough and the edges.
Tuck in the hanging sides of the dough.
Make shallow slits over the dough.
Put the baking dish inside a large baking sheet.
Place it inside the preheated oven and bake for 40 minutes or until the top turns golden brown.
Remove from the oven and sprinkle cinnamon on top.
