CHEESY SMOKED SAUSAGE AND POTATO CASSEROLE

Ingredients:

3 cups potatoes, peeled, boiled, and cubed

1 pound skinless smoked sausage

4 tablespoons butter

4 tablespoons flour

2 cups milk

1/2 teaspoon salt

1/4 teaspoon pepper

1/8 teaspoon paprika

1/2 pound Velveeta cheese cubed

1/2 cup shredded cheddar cheese

Directions:

Slice lengthwise the smoked sausage into two.

Chop the sliced sausage into small pieces.

Place a pan on the stove and turn the heat to medium.

Add the sausage slices and cook for 15 minutes or until they turn brown.

Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Put the potatoes in the bottom of a 2-quart casserole dish.

Add the cooked sausages into the casserole with the potatoes. Toss until well combined.

Place a saucepan on the stove, then add the rest of the ingredients aside from the paprika and shredded cheese.

Turn the heat to medium, then heat the mixture until the texture becomes smooth. Make sure to stir continuously.

Pour the sauce on top of the meat and potatoes, then spread it evenly.

Sprinkle a generous amount of shredded cheese on top as well as paprika.

Place it inside the preheated oven and bake for about 45 minutes or until done. When the top turns golden brown, you are good to go!

Remove from the oven and allow it to cool at room temperature.

Serve warm and enjoy!
