Prep this taco pasta ahead and simply cook in your trusty slow cooker the next day. This easy recipe will take only ten minutes to prep. Dump everything in the slow cooker and forget about it. Scrumptious, incredibly comforting, and a family-approved meal!

Slow cooker recipes are the easiest way to put food on the table especially for busy moms like myself. No need for any fussy preparation, just put everything in the slow cooker and leave. So good, your family will be licking their plate clean! And it’s a real treat for all the taco and pasta lovers!

INGREDIENTS

1 lb lean ground beef

salt and pepper

1 bell pepper (chopped)

15 oz. can crushed tomatoes

1 c. jarred salsa (I used mild)

15 oz. can corn (drained)

3 tbsp taco seasoning (I use this easy recipe)

2 ½ c. water or low sodium chicken broth (I used one 14.5 oz. can chicken broth plus enough water to total 2 ½ c.)

12 oz. shell pasta shapes (whole grain or white)

1 c. shredded cheddar cheese

How to make Easy Slow Cooker Taco Pasta

Step 1: On medium-high, preheat a large skillet. Once hot, add the beef and season with salt and pepper. Cook the meat until browned, stirring frequently. To a slow cooker, transfer the cooked beef along with the bell pepper, crushed tomatoes, salsa, corn, taco seasoning, and broth or water. Stir to combine.

Step 2: Set the slow cooker on low for 5 to 6 hours or high for 2 to 3 hours.

Step 3: Take the lid off and add the pasta. Toss to coat and cook for another 10 to 20 minutes on high. Note that the cooking time of the pasta varies depending on your slow cooker, so I suggest checking after 10 minutes.

Step 4: Before serving, stir in the cheddar cheese. Enjoy!
