Last week I was browsing the internet for a new and easy recipe when I stumbled upon this Roasted Cornish Hen. I tried it and I was surprised by the result. I never thought it would be this good! I figured, everyone should taste this delicious treat! So, here you go, friends! I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! Feel free to add more ingredients if you prefer. Ingredients:

2 cornish hens about 1.5 pounds each

3 tbsp olive oil divided

½ tsp kosher salt or to taste

¼ tsp black pepper

½ tsp dried rosemary crushed

½ tsp lemon zest

¼ tsp thyme leaves

¼ tsp garlic powder

Optional Vegetables

1 lb potatoes chopped

2 carrots chopped

1 onion chopped

Directions:

Prepare the oven and preheat to 225 degrees C or 450 degrees F.

Drizzle 1 tbsp of olive oil and sprinkle salt and pepper as well over the veggies. Toss until well coated.

In a small mixing bowl, add herbs and 2 tbsp of olive oil. Stir until well mixed.

Brush the hens with the oil mixture, then tuck the wings below.

Put the hens into a large casserole dish.

Place the veggies all around the hens.

Place it inside the preheated oven and bake for about 1 hour 5 minutes or until done.

Remove from the oven and cover it with foil. Allow it to rest for at least 10 minutes at room temperature.

Slice into small pieces.

Serve and enjoy!
