CHEESY GROUND BEEF AND CAULIFLOWER RICE CASSEROLE

This incredible casserole is packed with fresh spinach, beef, cheese, and cauliflower rice. A filling dish that is ready in less than an hour. This low-carb and Keto meal is the perfect weeknight dinner to serve on busy days.

Ingredients

1 tbsp olive oil

1 small yellow onion, diced

3 cloves garlic, minced

1 lb lean ground beef

1 tsp Italian Seasoning

½ tsp sweet paprika

Salt and pepper, to taste

6 oz. fresh baby spinach

1 package (10 oz.) frozen cauliflower rice, cooked following package directions

1 c. sour cream

1 tbsp butter

½ tsp dried basil

2 to 3 tbsp milk, if needed

8 oz. shredded Italian blend cheese, or any other shredded cheese that you have/prefer

How to make Cheesy Ground Beef and Cauliflower Rice Casserole

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: In a large 12-inch skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the onions and cook for about 2 minutes. Add the garlic, stir, and cook for another 20 seconds.

Step 3: To the skillet, add the ground beef and season with Italian Seasoning, paprika, salt, and pepper. Cook further until the beef has completely browned, breaking the meat up using a wooden spoon as it cooks.

Step 4: Add the spinach in batches depending on the size of the skillet and continue to cook for another minute, stirring often, until wilted. Take away from the heat, then drain the liquid from the skillet, and set the ground beef mixture aside.

Step 5: Combine the cooked cauliflower rice, sour cream, butter, and dried basil in a 9 x 13-inch baking dish. Mix well until combined and creamy. Stir in more milk if the sour cream and butter are not melting completely.

Step 6: To the dish, add the beef mixture and stir until everything is combined. And top with the shredded cheese. Place in the preheated oven and bake for about 22 to 25 minutes until the casserole is bubbly and the cheese has melted.

Step 7: Take the casserole from the oven when done and allow it to stand for a couple of minutes before slicing. Enjoy!
