CREAMY CAULIFLOWER SALAD RECIPE

This is by far the best salad I have ever tried! Yeah, it is! I am not a huge fan of salads, but this one changed me. Oh, man, you are so in for a treat! Ingredients:

3 Pete and Gerry’s Organic Eggs

1 head cauliflower cut into bite-sized pieces

2 stalks celery chopped

6 slices bacon chopped

2 green onions white and light green parts only, chopped

½ c mayonnaise

2 tbsp Dijon mustard

¼ tsp paprika

Salt and pepper to taste

Directions:

Place a large pot with 2 quarts of water on the stove and turn the heat to medium-high. Allow the water to boil.

Add the eggs and cook for about 12 minutes.

Drain the eggs and place them into a bowl with ice water to stop the cooking process. Allow the eggs to rest for at least 10 minutes.

Peel the eggs and chop them into small pieces.

Put the cauliflower slices into a large pot with enough water. Turn the heat to high and allow the water to boil. Cook the cauliflower for about 3 minutes or until soft. Drain and allow them to cool.

Add the chopped eggs, bacon, cauliflower, green onions, celery, Dijon mustard, mayonnaise, and paprika into a large mixing bowl. Stir everything until well mixed.

Add more seasonings if needed.

Garnish each serving with an egg slice, paprika, and parsley.

Serve and enjoy!

Note:

Feel free to place it inside the fridge first to chill before serving.
