Ingredients:

2 lbs ground beef

4 carrots, diced

4 celery ribs, chopped

1 onion, chopped

4 potatoes, peeled and cut into 1-inch pieces

1 (15 oz) can tomato sauce

1 (14.5 oz) can whole tomatoes, crushed

1 (15 oz) can peas, undrained

1 (15.25 oz) can whole kernel corn, drained and rinsed

1 (15 oz) can of green beans, drained and rinsed

ground black pepper to taste

⅛ tsp ground thyme

1 bay leaf, or more to taste

¼ c water, as needed

Directions:

Place a stockpot on the stove and turn the heat to medium.

Add the ground beef and cook until crumbly and brown. Remove excess oil.

Add the celery, carrots, and onion. Saute until soft.

Add the tomato sauce, potatoes, undrained peas, crushed whole tomatoes, green beans, corn, and pepper. Stir everything until well combined.

Add the bay leaf and thyme, then stir until well mixed.

Add 1/4 cup of water and stir until well mixed.

Cover the pot with a lid and simmer everything for about an hour or until the potatoes are soft.

Serve hot and enjoy!
