Ingredients:
1 tbsp oil
1 1/2 lbs bone-in and skin-on chicken thighs (4-6 thighs)
salt and pepper to taste
1 onion, diced
20 cloves garlic, peeled
2 tsp fresh thyme, chopped (or 1 tsp dry thyme)
2 tbsp flour
1 c chicken broth
1/2 c asiago cheese (or parmesan), grated
salt and pepper to taste
Directions:
Place a large skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Season the chicken thighs with salt and pepper.
Place the chicken thighs into the hot skillet and sear each side for 5 minutes or until brown.
Remove the chicken thighs from the skillet onto a clean plate.
In the same skillet, add garlic and onion. Saute until aromatic and translucent.
Add flour and thyme. Stir and cook for about 1 minute.
Add broth and scrape the bottom of the skillet to get the brown bits.
Add the asiago and stir until well mixed. Season with more salt and pepper.
Put the chicken thighs back to the skillet and spoon the sauce over.
Prepare the oven and preheat to about 200 degrees C or 400 degrees F.
Remove the skillet from the heat and place it inside the preheated oven. Roast the chicken thighs for about 15 minutes or until done.
Remove from the oven and allow it to cool for a few minutes.
