Ingredients:

1/2 c finely chopped pecans

1/2 c bread crumbs

2 tbsp honey, divided

2 tbsp Dijon mustard, divided

2 boneless, skinless chicken breasts, cut in half horizontally into 2 thinner pieces

salt and pepper

1 tbsp olive oil or vegetable oil

1 tbsp butter

3 tbsp bourbon

1/4 c heavy cream

1/4 tsp cayenne pepper

1/3 c chopped pecans

1 tbsp butter

Directions:

Add the breadcrumbs and finely chopped pecans inside a large resealable bag. Shake the bag until well mixed.

In a mixing bowl, add 1 tbsp of Dijon mustard and 1 tbsp of honey. Stir until well mixed.

Season with salt and pepper the chicken breasts.

Brush each chicken breast with the honey mixture.

Coat each chicken breast with the breadcrumb mixture. Shake off any excess.

Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Place a large pan on the stove and turn the heat to medium.

Add butter and oil, then allow them to melt and become hot.

Add the chicken breasts and cook each side for a few minutes until they turn golden brown.

Remove the chicken breasts from the skillet into a casserole dish.

Place them inside preheated oven and bake for about 10 minutes.

In the same skillet, add 1 tbsp of honey, bourbon, heavy cream, 1 tbsp Dijon mustard, pecans, and cayenne pepper. Stir and cook for about 3 minutes.

Remove the skillet from the heat, then add butter and allow it to melt completely.

Sprinkle salt and pepper to taste.

Serve the chicken breasts with the delicious sauce on top. Enjoy!

Note:

If the chicken breasts are large, slice them into thin cuts.
