The solution to busy evenings is slow cookers, and this simple dish assembles in just minutes. In the slow cooker, onions, green beans, and ham combine with just enough water to cover — three to four hours later, dinner is ready, and because everything cooks in one pot, cleanup is a snap too.
A good Slow-Cooker Green Beans, Ham and Potatoes, it is, by itself, a full meal. Preparing in the slow cooker is simple, and the best you can do for this recipe is leftover holiday ham too. I want to eat it with garden-fresh sliced tomatoes, fresh sliced onion, and cornbread.
Ingredients:
2 lbs of fresh green beans, rinsed and trimmed
(1) large onion, chopped
(3) ham hocks
1 1/2 pounds new potatoes, quartered
1 tsp garlic powder
1 tsp onion powder
1 tsp seasoning salt
1 tbsp chicken bouillon granules
ground black pepper to taste
Directions:
Halve the beans if they are growing, put them in a slow cooker to barely cover with water, and add the ham and onion hocks. Cover, and cook until simmering on High. Reduce the heat and cook for about 2 to 3 hours until the beans are crisp but not finished.
Add potatoes, and cook an additional 45 minutes. When frying carrots, extract ham hocks from slow cooking, and cut meat from bones. Chop meat or slice it, and return to slow cooker. Add and season with garlic powder, onion powder, salt, bouillon sauce, and pepper. Cook until the potatoes are ready, then taste adjust the seasoning.
Use a slotted spoon to place beans, potatoes, and ham in a serving platter with a little broth to serve.
