INGREDIENTS
8-9 whole Potatoes, Medium-Sized Cut under ¼-inch Thick
4 tbsp. Butter
4 tbsp. Extra Virgin Olive Oil
1 whole Onion, Medium-Sized Cut In Half and Sliced Thin
2/3 c All-Purpose Flour
3 c Chicken Stock
2 c Milk
2 1/2 c Cheddar Cheese, Grated
1/4 c Chives, Chopped
Salt and Pepper To Taste
6 whole Pork Chops
1 c All-Purpose Flour
1 tsp. salt
1 tsp. Pepper
1 tsp. Granulated Garlic
2 tbsp. Butter, Softened
3 tbsp. Extra Virgin Olive Oil
Additional Chives For Garnishing (Optional)
INSTRUCTIONS
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: In a bowl of cold water, soak the sliced potatoes. This will help remove the excess starch and prevent them from browning. Do this several hours ahead and place the bowl with the potatoes in the fridge.
Step 3: Melt 4 tbsp. butter with olive oil in a large saucepan over medium-high heat. When hot, saute the onion until caramelized. Then, sprinkle 2/3 cup of flour over and continue to cook until hot and bubbly. Gradually stir in the chicken stock around half a cup at a time to block lumps. And stir in the milk. Simmer and cook until the mixture has thickened before stirring in the cheese and chives. Simmer more until the cheese has melted. Season with salt and pepper to taste. When done, remove from heat.
Step 4: Evenly layer half of the drained potatoes in a 10 x 15-inch casserole dish and add the cheese sauce on top. Place the rest of the potatoes on top and cover with the rest of the cheese sauce.
Step 5: Place inside the preheated oven and bake for about 20 minutes.
Step 6: Mix a cup of flour, salt, pepper, and granulated garlic until incorporated. Then, coat the pork chops in flour mixture.
Step 7: Heat 2 tbsp butter with 3 tbsp extra virgin oil in a heavy-duty skillet over medium-high heat.
Step 8: When hot, add the pork chops 3 pieces at a time and cook until both sides are browned. Do this for the rest of the pork chops.
Step 9: Transfer the cooked pork chops on top of the potatoes.
Step 10: Cook for about 40 minutes until the potatoes are hot, bubby, and fork-tender.
Step 11: Before serving, let the casserole rest for at least 5 to 10 minutes.
Step 12: If desired, serve with extra cheese sauce and garnish with chives. Enjoy!
