Coastal Breeze Crab Salad
The “Coastal Breeze Crab Salad” brings back memories of our annual family beach trips. Every summer, we would rent a quaint seaside cottage where the sound of waves was a constant, soothing backdrop. One of our traditions was to visit the local fish market early in the morning to get fresh seafood for our meals. My mom would always make this crab salad, and we’d enjoy it during our picnic lunches on the sandy shore. The combination of creamy mayonnaise, zesty lemon, and the subtle sweetness of imitation crab meat instantly transports me back to those sunny, carefree days by the ocean. Now, I make this salad for my own family, and it never fails to bring a touch of the coast to our table, no matter where we are.

Course Salad
Cuisine American
- 1/2 cup mayonnaise
- 1 tablespoon white vinegar
- 1 tablespoon chopped parsley
- 1 teaspoon lemon juice
- 1/4 cup sliced green onions plus additional for garnish
- Kosher salt and freshly cracked black pepper to taste
- 1 pound imitation crab meat cut into pieces
- 4 to 6 rolls for serving
Prepare the Dressing:
In a medium-sized mixing bowl, combine the mayonnaise, white vinegar, chopped parsley, lemon juice, and sliced green onions. Season the mixture with kosher salt and freshly cracked black pepper to taste. Stir the ingredients together until well blended.
Incorporate the Crab Meat:
Gently fold the cut pieces of imitation crab meat into the dressing mixture. Ensure that the crab meat is evenly coated with the dressing without breaking apart the pieces.
Chill the Salad:
Cover the bowl tightly with plastic wrap and refrigerate for a minimum of 2 hours. This allows the flavors to meld together. The salad can be stored in the refrigerator for up to 5 days.
Prepare for Serving:
Prior to serving, slice the rolls and fill them with the crab salad. Garnish with additional sliced green onions to enhance the presentation. Serve immediately and enjoy.
